Creamy Celery Soup Recipe

Creamy Celery Soup:
2 Tablespoons butter
1+1/2 lbs celery (12 to 15 stalks)
1 medium onion, chopped
1 baking potato (8 to 10 oz), in 1/2" cubes
coarse salt
2 Tablespoons lemon juice
6 cups water

Heat the butter in a large (4 quart) saucepan over medium heat. Add celery, onion and potato. Season with salt. Cook, stirring occasionally until vegetables begin to soften, 6 to 10 minutes.

Add 6 cups of water to saucepan and bring to a boil. Reduce the heat to medium and simmer until vegetables are very tender, about 20 minutes.

Working in batches puree the soup until smooth.

Return to pan and add the lemon juice and more salt if needed.
